Kombucha is a sweet tea fermented with a symbiotic culture of yeast and bacteria based on sugar, tea and water. It is an ancient traditional drink with a slightly sour taste. When we are doing a home brewing, the longer the kombucha is fermented, the better the taste. In general, keep the pH of your fermented kombucha between 4 and 2. If it's below 2, it will taste like vinegar. Kombucha test strip is an easy way to monitor your brew’s pH.
